Cookie Dough Brownies (Dairy & Grain-Free)

*These can be made with ZERO added sugar, by omitting the chocolate chips!*

INGREDIENTS


For the brownie base:

- 1 can black beans - 1 cup soft pitted dates (If your dates aren't soft, soak them in boiling water in a covered container for 10 minutes) - 1/3 cup cacao powder (or cocoa powder) - 1/4 tsp salt - 1/4 cup melted coconut oil - 1/3 cup milk of choice - 6 Tbs oat flour (You can blend plain oats into a fine flour in a food processor or coffee grinder)


For the cookie dough topping:

- 1 cup oat flour

- 1/2 tsp baking powder

- 1/4 tsp salt

- 1/2 cup soft pitted dates

- 1/4 cup melted coconut oil

- 6 Tbs milk of choice

- 1 tsp vanilla extract


- Optional: 1/3 cup dairy-free dark chocolate chips

INSTRUCTIONS


Preheat your oven to 350*F Add all the brownie base ingredients in a food processor and blend until smooth.

Press the mixture into an 8×8 square pan lined with parchment paper. Rinse the food processor, then add in all the cookie dough ingredients and blend until smooth.

If adding chocolate chips, let the cookie dough mixture cool, then fold chips in and spread the mixture over the brownie layer. Bake for 25-40 minutes. You'll know the brownies are done when the edges pull away from the parchment paper and the high points are slightly browned.

Leave to cool completely before slicing. Enjoy!
