Mama Jo's Chicken Soup

INGREDIENTS

(makes about 4 servings)


2 chicken breasts

1 chopped onion

3 carrots

2-3 celery stalks

4 minced garlic cloves

1/4 head of green cabbage

2 bay leaves

1/4 - 1/2 tsp turmeric

salt & pepper

avocado oil

chicken broth (32-64 oz)

bone broth optional



INSTRUCTIONS

Cook chicken breasts and onion in a couple tablespoons of oil.

While chicken cooks, chop up your veggies!

Once chicken is cooked, shred it with two forks, then add breasts back into the pan with the onions.

Add in carrots, celery, cabbage, and garlic.

Add in enough broth to cover the ingredients. I like to add 8-12 ounces of bone broth when I have it on hand.

Throw in bay leaves, turmeric, salt & pepper.

Let simmer until veggies are soft!
