Chocolate Chip Blondies

INGREDIENTS

1 tablespoon ground chia seeds

3 tablespoons water

1 cup creamy almond or peanut butter

1/2 cup coconut sugar

1 teaspoon vanilla extract

1/2 teaspoon baking soda

1/4 teaspoon salt

3/4 cup dark chocolate chips


INSTRUCTIONS

Preheat the oven to 350°F and grease a 9-inch square baking dish with coconut oil.

Grind chia seeds in a coffee grinder if you don't have ground chia seeds on hand.

In a large bowl combine ground chia seeds and water and stir well until a gel-like texture starts to form. It usually takes a couple minutes to set up and change texture.

Then add in the nut butter, coconut sugar, vanilla, baking soda and salt, stirring until a batter is created.

Fold in chocolate chips.

Transfer the batter to the baking sheet, using a spatula and your hands to spread the batter evenly. (The batter is thick, so using your hands seems to work better.)

Bake until the top is slightly golden and the batter pulls away slightly from the sides of the pan, usually taking 20-30 minutes.

Let them cool completely before cutting.

NOTES

Other nut butters work great!

Using crunchy peanut butter makes for dry and crumbly bars that still taste great!

Ground chia seeds should be kept in the fridge to preserve freshness.
