Dairy-Free Chipotle Mayo

INGREDIENTS

1 cup raw cashews or walnuts, soaked**

1 chipotle pepper (you can definitely use canned Chipotle Peppers in Adobo Sauce found in the Mexican food aisle)

1 clove fresh garlic

1 tablespoon lime juice

1/4- 1/3 cup water (however much is necessary for desired consistency)

1/4 teaspoon cumin

1/2 teaspoon salt


INSTRUCTIONS

-Combine all ingredients in a high-speed blender, adding water one tablespoon at a time until reaching your desired consistency.

-Blend until smooth and creamy.

-Taste test when you're done! You may want to add another pepper to give it a little more kick!


NOTES

**Soaking your nuts overnight will soften them and create a more creamy consistency. If you aren't able to soak them overnight, you can submerge them in boiling water in an air tight container for about 10-15 minutes until soft.


-This is delicious over bean and rice dishes, tacos, and salads!
