Collard Wraps

These wraps can be made with collard greens, swiss chard, or any other kind of large edible leaf!
These wraps are great filled with practically any ingredients. Mix and match veggies! Add meat! Experiment!
INGREDIENTS
a bundle of collard greens - you'll need one leaf for each wrap
2 cups cooked quinoa
2 cups chopped cabbage
1 bell pepper
a couple handfuls of matchstick carrots
a handful of sprouts and/or microgreens
INSTRUCTIONS
Blanch your leaves:
-Prepare a large pot of boiling water.
-Once boiling, grab a collard green and submerge it in the water for about 10 seconds.
Blanching the greens allows them to soften, making them more palatable and pliable.
-After submersion shake off excess water and lay on a towel to dry.
-Continue this process for the remainder of your leaves.
Trim your leaves:
-Fold your blanched green in half with the stem pointing out.
-Carefully cut the stem away from the green. This is easiest when done with a paring knife.
-Avoid cutting holes in you greens as the stuffing will later fall through when you roll them into wraps.
-This doesn't have to be perfect! Just cut away as much of the stem as you can!
-This step gets easier with practice!

Build your wraps:
-Lay the remainder of the ingredients out on your leaf and prepare to wrap it up like a burrito.
-While rolling your wraps like a burrito,
be sure to fold the edges in as you roll.
-Place your wraps in a dish that allows them to stay rolled up tightly.
That's it!
-This specif collard wrap recipe tastes best when the wraps have had ample time to chill in the refrigerator, and are then dipped in Sesame Ginger Dressing!
-Collard wraps are delicious filled with chicken salad, egg salad, meat and rice...the possibilities are quite endless!
